I got a lot of complaints from my vegan, gluten-intolerant, and dairy allergy friends that I don’t bake enough treats that they can eat. So I developed this recipe in the hopes of remedying this. Turns out they don’t like peanut butter. In any case, if you have friends that have dietary restrictions and can/will eat peanut butter-based desserts then you can succeed where I have failed. This simple recipe only has three ingredients and is fairly forgiving to bake. The only unforgiving part is how addictive they can be.

- Preheat the oven to 350 F.
- Mash half a banana in a bowl using a fork until it resembles a paste and then mix in the sugar. Mix peanut butter into batter until a malleable mass of dough forms. You should be able to hold and roll rough balls of dough in your hand - a little stickiness can occur but is fine.
- On a parchment-lined baking sheet, space out 12 balls of dough and then press down using a fork twice in opposite directions for each ball, forming a grid-like pattern.
- Bake at 350 F for roughly 12-14 minutes or until the edges barely give when pressed with a spatula. Let cool on the baking tray for at least 5-10 minutes.
