Sometimes our best creations are actually accidents. While experimenting with a vegan sugar cookie, I accidentally created something with a taste reminiscent of chocolate chip cookies. After a very quick shift in hyperfixations, I spent the next two months developing this recipe. My goal was to create a cookie that would remind people that vegan food does not cut corners on flavor or texture. After dozens of iterations, I present my vegan chocolate chip cookie that will definitely be a regular in my house.

- In a mixing bowl, use a fork to mash one banana into a rough paste. Add in the peanut oil and sugar before mixing together with fork until a smooth mixture forms. You will likely have some banana chunks still visible, but this is okay so long as none are significant in size.
- Add the flour, chocolate chips, vanilla, baking powder, and salt into the mixing bowl with the banana/sugar mixture. Mix together using either your hands or a spatula until a wet ball of dough forms. It should be a bit sticky, but still hold its shape.
- Form the dough into a rectangle before wrapping completely in plastic wrap. Let the dough chill in the fridge for at least an hour.
- In the last 10-15 minutes of chilling, preheat your oven to 400F. On a large baking sheet, form 15 equal sized balls of dough. Using your hand, push these balls down to form a disk roughly 1/2 to 3/4 inch tall.
- Bake the cookies for 10-14 minutes, removing once they take on a slightly golden brown color along their edge. Let cool on the tray for 5-10 minutes before eating.
