These cookies are the culmination of a years worth of learning. Sweet, chocolatey, and chewy on the inside. This cookie has most people saying “Holy ****” after their first bite. Some have even compared it to a brownie in cookie form, due to its rich, chewy interior. This chewy interior comes from its short baking time in high temperatures. Thus, allowing the outside to fully set while the inside just barely cooks through. So, try it out for yourself, you won’t regret it.

- Melt butter in a small pot over medium-low heat until you are left with only liquid. Then add in semi-sweet chocolate and continue to stir until the chocolate is completely melted and somewhat shiny chocolate sauce is formed. Remove from the heat and pour into a large bowl.
- Mix in the salt, vanilla, baking powder, and flour and bring together using a spatula or your hands. If using your hands let the sauce cool to avoid burning. Halfway into mixing, crack in the egg and egg yolk then continue to mix the ingredients together. You will be left with a somewhat dry looking dough.
- Wrap the dough completely in saran wrap or place in a large freezer bag before letting chill in the fridge for at least 30 minutes. If using a freezer bag, attempt to remove as much air as possible from the bag.
- Once chilled, form 12 equally sized discs then spread them out evenly on a baking sheet. Bake for 8-12 minutes before removing from the oven.
- Let cool for 5-10 minutes on the baking sheet before removing and serving. They will be soft on the inside but firm on the outside.
