Do you like chocolate? Of course you do, why else would you be on this page. This chocolate loaf cake has everything a chocolate lover could desire. A simple chocolate cake that takes less than 20 minutes of prep, uses cheap and easy to get ingredients, and can be customized to your liking. While this recipe uses a chocolate ganache, loaf cakes can be topped with anything from raspberry syrup to a buttercream frosting. You can also sprinkle chocolate chips or shavings over the top or maybe even add them into your cake if you feel daring. Whatever it is you want to do, this cake can be your test bed.

- Preheat your oven to 350F and grease a 9x5 or 8x4 loaf pan with either butter or cooking spray.
- In a mixing bowl, cream together butter and sugar using either a mixer or spatula until the butter and sugar are completely incorporated. Then mix in the eggs one at a time before finally mixing in the milk.
- In a separate bowl, measure out your baking powder, flour, and cocoa powder. Sift these ingredients into the mixing bowl with the wet ingredients and then add in the espresso powder, salt, and vanilla. Mix together until a roughly homogenous batter is formed, being sure to scrap down the sides and bottom of the bowl. There may still be some chunks of creamed butter, but this is fine.
- Pour into your greased pan and cook at 350F for 45-55 minutes. A knife or stick stuck into the center of the loaf should come out with dull, wet crumbs. Once removed from the oven, let cool in the pan before placing on a wire rack or cutting board. Let cool for at least an hour before moving to the next step.
- In a small saucepan, melt chocolate chips and heavy cream together over low or medium-low heat, being sure to stir frequently to avoid any burning. Once a smooth sauce has been formed, remove off the heat and allow to cool until your desired consistency. Pour or spread this over your cake and allow to firm up a little before eating.
