When developing this recipe, I took inspiration from the sweet chocolate chip skillet cookies found at many restaurants in my hometown. While undoubtedly sweeter than my typical cookie recipes, the extra vanilla goes a long way in making this recipe a great treat for those who's highest praise for a dessert is "Not too sweet."

  1. Preheat your oven to 350 Fahrenheit and butter a 8-9 inch cast-iron skillet. Buttering may not be needed if you season your cast-iron well unlike me. If you do not own a cast-iron skillet, you can use a 10-inch springform pan, but you will get a slightly different outcome for texture.
  2. Using a mixer with a paddle attachment or a spatula, combine sugar and butter in a large bowl until you're left with only small chunks of butter.
  3. Combine the rest of the ingredients and mix together by hand or using a mixer. You will work the ingredients together, doing a slight knead, until there is no more visible flour spots and you can easily transport the dough.
  4. Transport the dough into the skillet or pan of your choice and level it out by hand, making sure there are no spots where you can see the bottom of the skillet/pan.
  5. Bake at 350 Fahrenheit for 30-40 minutes, removing when golden brown and a toothpick or knife comes out clean or with dull dough crumbs.
  6. Let sit for 15-20 minutes to finish cooking in the skillet/pan before slicing and serving with optional vanilla ice cream.
